Life has been zooming by lately. It’s easy to get caught up in all of the excitement, stress and change. I found myself letting it get the best of me. Then I went on a walk and was reminded that these moments in life are truly wonderful because they give you the chance to practice being present and grateful.

My morning walks have been doing me wonders but nothing makes me feel more grounded and happy  than a good breakfast. I have been thinking about how to have nutritious, delicious breakfasts with little prep time AND have them work on the go! Last week I shared this Papaya Fruit Salad Bowl, its been a life saver. Ive been eating them a lot lately.

If you want something a little more hardy then this Pear & Citrus Overnight Oats is just what you need! I eat half of it in the morning and save the 2nd half as a prize once I get some work done. Do you bribe yourself with food? Maybe its just me. Ha!

Pear & Citrus Overnight Oats

Ingredients




Organic Produce Orange Blood Orange and Pear Gluten free
  1. Place 1 cup of oats in a measuring cup. Cover oats in water, mixture now measures 1 1/2 cup.
  2.  Let it soak overnight.
  3. In the morning your oats will be ready! Rehydrate with the juice of a 1/4 slice of the orange and blood orange. Add in coconut water. Mix and let it sit while you prep the fruit.
  4. Cut up pears and citrus.
  5. Layer oats, pear, citrus, and walnut in a tall mason jar as if you were making a lasagna. So satisfying.
  6. Top with flax seeds. Enjoy!
